If you have ready-made chicken both broth or vegetable stock, this super quick and easy leek soup recipe can be made in less than 20 minutes. I usually defrost a portion of my Collagen Chicken Bone Broth that I keep frozen in batches.

- 4 leeks, well trimmed and roughly chopped

- A sprig of thyme, stalk removed
