My Guacamole

I love a smooth guacamole - it’s jam-packed with good fats and vitamins and takes less than 15 minutes to make. My recipe uses lime zest and ground onion making it more fragrant than pungent. I tend to prepare two batches; one plain and the other spicy.

Ingredients

  • 1 avocado

  • 1/4 of an onion, chopped

  • 1 tomato or 6 cherry tomatoes

  • bunch of coriander, finely chopped

  • 1 chilli finely diced and deseed (options)

  • Juice of half a lime

  • Zest of a whole lime

  • Salt to taste

Method

  • Firstly, zest the lime and juice in that order.

  • In a pestle and mortar. grind the onion into a paste with the salt. Mix in the lime juice and leave to settle. This will neutralise the sharpness of the onion.

  • Remove the liquid core from the tomato and chop finely.

  • Scoop the avocado in with the onion and lime mix and gently crush. Combine in the tomato, lime zest, coriander and, optionally, the chili. Season with salt and more lime juice to taste. Serve immediately.
