Salmon and Ricotta Frittata

Luscious low carb eggs are my favourite breakfast. This smoked salmon and ricotta fritatta is quick and easy to make but full of good fat and omega 3s.

Ingredients

  • 100g of smoked salmon, sliced

  • 2 eggs, beaten and seasoned

  • 4 tablespoons of ricotta cheese

  • A handful of chopped chives and parsley

  • 1 tablespoon of olive oil

  • Salt & Pepper

Method

  1. Pre-heat the oven to 180C. Gently heat the olive oil in pan, keeping in on a low heat. Pour in the eggs into the pan. Evenly spread out the salmon pieces, dot with spoons of the ricotta and sprinkle with half the parsley and chives.

  2. Transfer to the oven and cook until it sets - around 10 minutes. Serve garnished with the remaining herbs and seasoned with salt and black pepper.
