Pesto Oats

Savoury oats porridge are very popular in India where they are know as Masala Oats. Typically, masala oats are flavoured with turmeric, ginger, chili and coriander but I wanted to make a non-spicy Italian-inspired version.

You may be used to eating your oatmeal or porridge sweet with simple honey and fruit but I promise you this is worth a try!

This delicious super-healthy breakfast - it packs fibre low-GI oats with protein, vitamins and minerals. This savoury oats recipe is so satisfying and easy to make and it moonlights very well as a quick supper.

 

Pesto Oats

Serves 1

Method

  1. Combine the oats and tomatoes with water and a pinch of salt. Microwave on full power for 2 minutes, check the consistency, and add more water if needed. Alternatively, cook the oats in a saucepan with approximately 200ml of water for 8-10 minutes.

  2. Stir in the pesto and parmesan, then season to taste. Put the egg in the middle of the bowl and garnish it with some chopped rocket and basil leaves.
