I make this mouth watering shrimp and asparagus stir fry when I am Looking for a healthy, quick and easy dinner option. This stir fry is a recreation of one of my favourite Chinese recipes and packs a nutritious punch with protein-rich shrimp and vitamin-rich asparagus.

Shrimp and Asparagus Stir Fry

Serves 2

Ingredients

  • 250g of shrimp

  • 1 large bunch of asparagus, chopped diagonally

  • 1 tablespoon of minced ginger

  • 2 cloves of garlic

  • 2 spring onions, with white and green parts sliced separately

  • 2 tablespoons of cornflour

  • 3 tablespoons of rice wine

  • 1 teaspoon of soy sauce

  • Vegetable or coconut oil

  • Salt and white pepper

Method

  1. Start by quickly marinading the shrimp. Combine the cornflour, rice wine, and soy sauce in a bowl and adding in the shrimp. Toss to coat the shrimp fully.

  2. Next, stir fry the chopped asparagus and sliced white parts of spring onion in oil in a wok or high-sided pan. Add minced ginger and garlic, making sure to keep tossing so they don't burn. Add a few tablespoons of water and cover for two minutes to lightly steam the asparagus.

  3. Add in the prawns and the marinade and more water if needed. Toss and cover for 2-3 minutes when the prawns should be cooked. Season to taste, toss in the spring onion greens and serve immediately.

  4. Now it's time to add in the shrimp and the marinade. Toss everything together and cover for another two to three minutes until the shrimp are fully cooked. Add a couple of tablespoons of water to generate steam. Season with salt and white pepper to taste, toss in the sliced green parts of the spring onion, and serve immediately.
